Sole Meunière Recipe

Serves 2


  • 2 Fillets of flat fish (dover sole is our favourite!)
  • 5 tbsp Plain flour
  • 3 tbsp Olive oil
  • 85g Butter
  • Juice & zest from 1 lemon
  • 2 tbsp Capers
  • Fresh parsley and basil, roughly torn
  • Sea salt & pepper


In a large shallow bowl, season the flour with a little salt and black pepper. Toss the fish in the flour, coating well, and shake off any excess.

Heat the olive oil in a large frying pan. Add the fish and cook, for 2 mins on each side until lightly golden, using a fish slice or large spatula to turn.

Remove the fish to a warmed plate. Return the pan to the heat, then add the butter. Heat until it melts and just begins to brown, then mix in the lemon juice and capers. Swirl in the pan for a few secs before adding the herbs then spoon your sauce over the fish. Serve immediately and enjoy.
